Sometimes a girl needs her carbs, and sometimes a girl needs her carbs covered in heavenly, creamy, cheesy sauce. Well, my time was on Wednesday. I had been craving one of my favorite dishes from back home so bad. I needed a big ol bowl of creamy carby goodness stat. When I’m craving such a thing, something so terribly bad for my hips, but oh so good for my soul, I almost always come back to one of my Louisiana favorites. My Cajun Chicken Fettucine Alfredo is the perfect combination of spicy, juicy chicken breast, and rich, creamy sauce covered pasta. It’s truly the perfect food for my soul!My main recommendations for this recipe are that you use chicken breast halves to cut down on your cooking time. If you only have full chicken breasts on hand, fear not! Just slice those babies length wise down the middle and halves you’ve got! Also, I highly recommend that you use freshly made or refrigerated pasta from your grocery store. (that’s honestly my recommendation for any pasta recipe!) Fresh fettucine noodles are so much better than boxed ones. Save the box for some other time. To enjoy this recipe to it’s fullest, richest extent, go for the fresh stuff! And after trying this sauce, I promise you’ll never go for the stuff in the jar again!
